The ingredients for Potato Buns are:

1 large potato (or 1 c. mashed potatoes)
1/4 cup potato water
1/4 cup butter (4 tablespoons, 1/2 stick)
1/4 cup + 1 tsp. sugar
1 egg
about 1/4 cup milk
2 teaspoons active dry yeast (one package)
1/4 cup warm water (105?-115?)
1 teaspoon salt
3 cups whole grain flour

Here is how you make Potato Buns:

If using a raw potato, dice and add to a pot of water; bring to a boil and cook til tender. Drain well, reserving 1/4 c. cooking liquid. Mash potato and set aside. In mixing bowl of stand mixer, combine potato cooking liquid, butter, 1/4 c. sugar, and mashed potato. Mix well and set aside to cool to room temperature (if using pre-mashed potatoes, just mix). In small bowl, combine yeast, warm water, & 1 tsp. sugar. Set aside for 10-15 minutes to proof. Crack egg into a measuring cup and pour in enough milk to measure 1/2 cup. Whisk briefly to mix. Make sure potato mixture has cooled to room temperature (so you don't kill the yeast), then add yeast and egg mixtures and stir till combined. Use dough hook attachment, sift in flour 1 cup at a time (start with 3 cups flour, and add the final cup only if needed). The dough should pull together around the dough hook and clean off the sides of the bowl. Knead using dough hook for 10 minutes. When dough is smooth and elastic, place in oiled bowl and let rise til doubled, 45 minutes to an hour. Punch down and pat into a round on floured surface, then cut into 16 equal wedges and shape for rolls. Use ample flour so nothing sticks, especially on the bottom of the rolls. Place rolls on ungreased pans and let rise til doubled again, about 45 minutes. Preheat oven to 400 degrees. When you put the buns in the oven, reduce heat to 300 degrees and bake 10-12 minutes, till golden brown. Rotate pans partway thru baking if your oven has hotspots.
