4 TBS fat free sour cream

How Do I Make Potato Samos?

Here is how you make Potato Samos:

Boil potatoes whole until just done but still firm. Let cool long enough to handle and then peel and slice into about 1/2 inch slices. Thinly slice onion and peppers and saute until soft. Combine yogurt sour cream and seasonings. I like to use fresh chives, dill weed, and oregano, along with some black pepper, paprika, a drop or two of tabasco sauce and a scant tsp of horseradish.Place half of the potato slices in a large shallow baking dish. Spread each potato slice with some of the yogurt sauce and then place a slice of onion and a slice of pepper on each. Sprinkle with a little of the shredded cheese. Top each slice with the remaining potato slices. Top with any remaining sauce and cheese.
