Heat cooking oil or spray large frying pan with nonstick cooking spray.Combine mashed potatoes and eggs in a bowl, mixing well. Add salt and pepper to taste, and chopped onion if desired. Drop by heaping spoonfuls into hot skillet, flattening slightly so that pancakes are about 1/2 inch thick. Cook until golden brown on one side; flip and continue cooking until other side is also golden and crispy. We eat ours with syrup, omitting the onion.
