Place potato and onion pieces in blender. Fill blender with water and grate until all potato and onion pieces are grated. Drain in screen colander until most water is removed (about 5 minutes). Place onion/potato mixture in mixing bowl. Add egg, flour and salt and pepper (to taste) and mix with spoon until combined. Heat 1 tbsp. oil in skillet. Use mixing spoon to spoon potato/onion mixture into skillet and spread to a little larger than a silver dollar pancake. Brown on one side, turn, brown on other side.
