Bake potatoes at 400 F until soft on the inside and crispy on the outside, approximately 45 minutes. Meanwhile, heat the oil in a skillet, add onions. Saute for 10 minutes, then add ginger and cook for another 5 minutes or until well done. Add garlic and spices. Add as much as 1/2 cup of water if the mixture sticks to pan. Cook until all ingredients melt together. Add tamari. Turn off heat. Cut potatoes in half lengthwise when cool enough to handle. Scoop out insides, leaving enough potato in the shell so that it does not tear. Combine the potato insides with onion mixture, and add cottage cheese.
