Boil the potatoes in salted water until tender - about 15 minutes. Drain and set them aside.Melt the margarine in a heavy saucepan. Saute the scallion in it for 2-3 minutes, then stir in the mushrooms and saute for 3-4 minutes. Add the flour and stir until gradually mixed. Gradually add the stock, stirring all the time until smooth. Add the bay leaf and then bring the mixture to a boil, then reduce the heat and simmer, uncovered, for 8 minutes.Add the cooked potatoes to the sauce and, stirring occasionally, heat through over low heat.
