I love colcannon ( Irish mashed potatoes) and wanted to make a dish that didn't take up half of my day's calorie count! To reduce calories and carbs, I added more cabbage and vegetables, and replaced traditional red potatoes with 4 medium sized regular potatoes.

Here is how you make "Healthy" Colcannon (Potatoes):

Peel Potatoes, cut in chunks and put in boiling water with salt.Put cabbage, onion, celery and carrots into a food processor. I hit "pulse" until coarsely chopped.Potatoes are done when soft and fore can easily penetrate them. Lift potatoes from water using slatted spoon and place in mixing bowl. While potatoes are still hot add milk and butter to bowl. Mash until smooth.Meanwhile, place vegetable blend into boiling water from potatoes. Boil until cabbage is translucent.Drain cabbage mixture and fold into mashed potatoes, until well blended. You can add salt and pepper, or a few more sprays of butter for taste.Makes 6 servings of approximately 3/4cup.I enjoy this dish with a braised lean lamb steak, soda bread, and a Guinness- when I can afford the calories!Number of Servings: 6Recipe submitted by SparkPeople user LEHIGHAMY.
