Slice potatoes in food processor. Put in large mixing bowl with sliced onions.In a separate bowl, mix 1 cup of shredded cheese with remaining ingredients. Pour mixture over potatoes and mix well with spatula.Pour 1/2 the potato mixture into a large prepared casserole (I like a large shallow one). Sprinkle 1 cup of cheese over, and top with remaining potato mixture. Bake in 350 oven for 1 hour.Remove from oven and sprinkle remaining 1/2 cup of cheese on top.
