12 large eggs, fresh, whole
1 tsp Lawry's Seasoned Salt (or homemade)
1 cup Greek yogurt
2 cups cottage cheese, 1% Milkfat

1-3 cup batch of Quinoa (red looks best)

Paprika or turmeric for garnish

Here is how you make Quiche (crustless high protein):

Cook one batch quinoa, red looks nicest but can be hard to find. If doubling the recipe your going to use all of the quinoa. Saute the onion, garlic, spinach, additional vegetables if you want more, crumbled tofu. While sauteing, add the eggs to a large mixer bowl, mix the eggs then add cottage cheese, seasoning salt and yogurt. When the sauteed vegetables are no longer hot add to the egg mixture. Blend all the ingredients. Your bowl may be very full!On a greased jelly roll pan (12x17) spread out half of the quinoa or 1.5 cups, slowly pour the egg mixture on top of the quinoa. The jelly roll pan will be very full, you may want to place the pan in the oven, on the rack to pour the egg mixture. Sprinkle the top with turmeric or paprika. Bake at 350 for 40 minutes. Don't over cook, the center may be a little jiggly when the pan is removed from the oven. Allow to cool before cutting into 20 squares.
