Here is how you make Breakfast Stir Fried Rice:

1. Chop the scallion, 1/4 sausage, and mushrooms into small chunks, about 1/4" x 1/4" or to your preference.2. Saute scallion, sausage and mushrooms in olive oil and/or cooking spray over high heat for about 2 minutes or until mushrooms are cooked.3. Sprinkle with seasoned salt and cayenne (if you like it spicy)4. Add cooked rice/quinoa and soy sauce and mix well5. Add egg and stir until it's scrambled & cooked in with the rice mixure. Cook's Notes:- Make a vegetarian/vegan version by using meatless sausage and no egg. - You can use any leftover veggies you have handy instead of or in addition to mushrooms and scallions.
