1 carrot, slice into rounds
1 cup long-grain white rice
2 cups vegetable or chicken stock
1 tb fresh parsley, chopped

How Do I Make Matthew's Rice?

Here is how you make Matthew's Rice:

2Melt 1 tb butter in a small skillet and sauté carrots until soft, 2-3 minutes. Place rice in the bowl of the rice cooker and add the stock, parsley, thyme, and carrots. Swirl to combine. Close and turn on the rice cooker. When the machine switches to Keep Warm, add the peas and let the rice steam for 10 minutes. Fluff the rice with a spoon. The rice will hold on Keep Warm for 1-2 hours.When ready to serve, add the remaining 1 tb butter and the almonds, stirring to distribute evenly.
