This recipe substitutes ground turkey for pork sausage to bring down the fat content. Lots of veggies add vitamins and lots of garlic adds a flavor punch. I made this dish for two friends of mine who are on a strict low-fat diet; one of them is from Mississippi (outside of New Orleans) and he gave it his seal of approval. Whew!

2 Tbsp. olive oil
6 cloves of garlic, crushed
1 lb. ground turkey
1 tsp. poultry seasoning
1 tsp. paprika
1 green bell pepper, diced
1 red or yellow bell pepper, diced
1 medium onion, diced
1 1/2 cups regular long-grain white rice, uncooked
3 cups reduced fat chicken broth
salt and pepper to taste


How Do I Make Low-Fat Dirty Rice?

Here is how you make Low-Fat Dirty Rice:

Heat oil in medium (4 qt. or larger) stockpot over medium heat. Add garlic and cook until it "speaks," about 3 minutes. Add ground turkey, poultry seasoning and paprika; until no more pink shows in meat, about ten minutes.Add peppers and onion, cook 2-3 minutes until just soft.Stir in rice and chicken broth. Turn up heat to high and bring to a boil, then cover and simmer over low heat until all of broth is absorbed, about 20 minutes.Remove from heat, salt and pepper to taste, and serve.Makes 8 side-dish servings or 4 main-dish servings.Serving suggestion: Great with a dash of hot sauce!Number of Servings: 8Recipe submitted by SparkPeople user SMOOCHAGATOR.
