Cook Rice according to package directions. Set aside.Heat 1 TBSP of oil & 1 TBSP of brown sugar in large saute pan. Pour eggs into the pan to make a large omelette. Cook until it sets (do not flip over!) and remove from pan. Roll up the omelette and slice into thin, bite-size pieces.
