Here is how you make Fried Rice, Traditional:

Pour around 1/2 Tbs of oil into a hot wok. (You need more oil in a skillet, unfortunately.)Add egg and stir to scramble lightly. Add cold rice immediately after the egg is cooked. Add 1/2 the onion - if it's separated into white and green parts, use the white part.Hit the rice with the spatula to break it up. Stir frequently to mix everything together. Taste. Add a little salt and pepper to taste. At the end, remove from heat and, add a few drops of sesame oil if you like that flavor. Then add the remaining onion, and stir. The heat will gently cook the onion slightly.I consider this to be an "authentic" fried rice, similar to the ones I've had at restaurants frequented by immigrants.
