The ingredients for Lentils and Rice are:

6 ounce brown lentils, washed and picked over
1/4 teaspoon salt
4 1/2 teaspoons olive oil
1 large onion
1 tablespoon ground cumin seed
1/2 teaspoon ground cinammon
1/2 cup long-grain rice
2 cups water
freshly ground pepper to taste


How Do I Make Lentils and Rice?

Here is how you make Lentils and Rice:

Soak lentils in water to cover for 1 hour. Drain, place in saucepan or casseole, cover with water by two inches and bring to a boil. And salt, reduce heat and simmer for 30 minutes, until tender. In another saucepan or skillet, heat 1 tablespoon of the olive oil and chop and saute half the onion until it begins to color. Add cumin seed and cinnamon, stir together and add rice. Stir to coat with oil and add two cups of water plus lentils with their liquid, plus salt and pepper to taste. Stir together and bring to a boil, reduce heat, cover and cook 20 to 25 minutes or until liquid is absorbed.Slice the remaining onion and brown in 1 1/2 teaspoons of olive oil. When rice and lentils are cooked, serve the browned onions on top. Can also be served with plain yogurt as a side (nutrition info not included in recipe).
