1 can dark red kidney beans
2 2/3 cup brown, uncooked
5 1/2 cups water
3 cloves garlic, minced
1 stalk escallion
1 medium onion, chopped
3 sprigs fresh thyme (about 1 tsp)
1 fresh scotch bonnet peppers
2 tbs soft margarine
salt, to taste

1. In a saucepan combine - kidney beans, water, all seasoning. margarine and salt.
Bring to a boil.
2. Add rice, stir to combine with other ingredients already boiling in sauce pan. Cover and cook, over medium heat for about 10 minutes - until liquid has almost been absorbed. Turn down heat to low and allow to simmer/cook(covered) for about 10 minutes until water is completely absorbed and rice is done.
Makes 12 servings.
