1/2 large head fresh cauliflower, broken in bite size pieces (about 4 cups florettes)
1/2 cup freshly grated parmesan cheese
1/4 cup plain dry breadcrumbs
1/2 tsp. ground cumin
1/4 tsp. cayenne pepper, or to taste
salt and pepper to taste
2 eggs, beaten with 1 tablespoon water
1/2 cup freshly chopped parsley
1 lemon, cut into wedges

Here is how you make Savory Roasted Cauliflower:

Preheat oven to 425. Spray a cookie sheet with olive oil spray. Mix parmesan, breadcrumbs, cumin, cayenne, and salt and pepper together in shallow dish. Beat eggs and water together in a small mixing bowl. Dip cauliflower a handful at a time into the egg mixture, then into cheese mixture. Place in a single layer onto the cookie sheet. Repeat until all cauliflower is dipped and coated. Spray with a little more olive oil spray. Bake 20 minutes. Remove to a plate and sprinkle with fresh chopped parsley.
