3 pounds red potatoes, halved or quartered
1 cup finely chopped red onion
1 cup thinly sliced yellow onions
3 cloved garlic, peeled but whole
1/4 cup chopped fresh parsley
rest of the beer opened for marinade
2 Tbs olive oil
1 Tbs sugar
3/4 teaspoon salt
1/8 teaspoon freshly ground black pepper

Whisk all of the marinade ingredients together until well emusified. Pour over cubed potatoes and garlic cloves in a gallon zipper bag. Let sit on the counter at room temperature and flip over from time to time. Preheat oven to 425'. After the potatoes have absorbed most of the marinade, place them and the garlic on a sheet pan lined with foil and prepared with cooking spray. Roast for 30 minutes or until cooked through and browned on the outside. In a dutch oven over medium heat, heat the oil and add all of the onions. Continue to cook until golden and very soft. Add the remainder of the beer not used in the marinade. Add the sugar and allow it to cook down to a thick consistency. Add salt, pepper and potatoes. Heat through.
