Place poatatoes in a deep skillet and season with salt and pepper. Cover potatoes 1/2 way with chicken stock. Add buttery spread and cover with lid. Bring to a boil then lower heat and simmer until almost tender (about 6 - 8 min depending on size of potatoes). Remove lid and continue to cook, allowing stock to evaporate (about another 5 minutes).
