Here is how you make Zingy Roasted Potatoes:

Peel and cut potatoes into large chunks. Rinse well to remove the starch. Put into large roasting pan.Grate or finely chop garlic. Add olive oil, chicken broth, thyme, oregano, basil, salt, black pepper, onion powder and coarse (or regular) mustard. Pour on top of potatoes and mix well. Bake 25 minutes. Remove from oven and stir in bell peppers and onions. Be sure to stir potatoes well. Bake an additional 25 minutes, until fork tender.
