Here is how you make Quinoa with Roasted Vegetables:

Preheat the oven to 400 degrees F.Cook the Quinoa using the directions on the package.Chop all vegetables and place on a baking sheet (line with foil for easy clean up. Drizzle with 1 tbsn olive oil, sprinkle with salt/pepper and toss to coat. Cook in 400 degree oven until veggies are tender and starting to brown. It should take 30-40 minutes. In a separate bowl, whisk all dressing ingredients together.When Quinoa and vegetables have finished cooking, combine both in a large bowl and mix. Add dressing to taste to entire bowl and serve or reserve the dressing and offer it on the side.Makes 8 1-cup servings. Note: The nutritional info is calculated with the full amount of dressing.
