In your one cup warm (room temp.) water, add the yeast (4 1/2 tsp or two packages) and let it sit. In another bowl, add about six cups of the flour. Use a sifter and add your sugar and salt in the top. Sift it through. It will help to mix it all together. Add your now melted shortening and milk mix. Mix together. Make sure your mixture isn't too warm when you add the yeast or it will kill it. Add Yeast/water mixture. Knead well. Add the rest of the flour as you go. You can use more or less as suits you. I've found I typically use just over nine cups of flour. Once thick enough, cover and let rise in a warm place until it's twice the size as it was to start. Knead again. Let sit until it rises again. Divide into either your greased bread pans or your greased roll pans. Makes two large loaves of bread & 24 rolls, or just 48 rolls.
