2 cans black beans, drained and rinsed
1lb frozen sweet corn kernels
10.5 oz package grape or cherry tomatoes, cut in half
1 large orange bell pepper, diced small
1/3 cup red onion, diced small
1/2 cup fresh cilantro, chopped
2 haas avocados, diced just before serving

dressing:
1/3 cup fresh squeezed lime juice
1/4 cup extra virgin olive oil
1 tsp salt
1/8 tsp cayenne pepper
1 clove garlic, pressed

Here is how you make Black Bean and Corn Salad with Avocado and Lime:

In a large bowl, mix together all of the ingredients under "salad" except the avocados. No need to thaw the corn unless you plan to serve immediately (in which case you can just run the corn under cold water for a few minutes). In a small bowl, mix together ingredients for "dressing". Pour almost all of the dressing over the salad (reserving a few tablespoons). Put salad in refrigerator to let flavors come together and corn thaw. Just before serving, dice avocado and toss it with the reserved salad dressing (to keep it from browning). Top salad with diced avocado and serve!This salad gets better as it sits, but avocado doesn't keep particularly well, so I always keep it separate and cut it as I serve. The salad is also good topped with grilled chicken!Serving Size:?serves 8
