1 (12 oz) bag of fresh, whole Cranberries (ground in food processor)
1 cup of Splenda No Calorie Sweetener (or no-calorie sweetener of choice)
3/4 cup water
1 Envelope of Knox unflavored Gelatin (dissolved in 1/4 cup boiling water)
3/4 cup Orange Juice
1 cup Crushed Pineapple (drained)
1 serving Apple (I use Gala), peeled and chopped in tiny pieces
1 box (.3oz) Raspberry or Cherry Gelatin Dessert, Sugar-free
1/2 cup chopped Walnuts
3/4 of a pint of Whipping Cream
1/2 cup, unsifted Powdered Sugar
12oz of Cream Cheese, Fat-Free (1-1/2 (8oz) packages)
1 tsp Vanilla Extract



How Do I Make Cranberry-Cream Cheese Salad?

Here is how you make Cranberry-Cream Cheese Salad:

Rinse, drain & grind the cranberries in the food processor. Mix with the sugar substitute and set aside. Dissolve the packet of unflavored gelatin in 1/4 cup of boiling water and set aside. In a medium size pan, boil 3/4 cup of water & dissolve the raspberry (or cherry) jello. When dissolved, add the orange juice, the dissolved unflavored gelatin, the apple pieces, pineapple, and cranberries. Mix well, pour into bowl or pan, and place in refrigerator to gel until it has thickened.While the jello is 'setting up', whip the whipping cream with the vanilla and powdered sugar in a small bowl and set aside. In another bowl, beat the cream cheese with the mixer until it is fluffy, then add the whipping cream/sugar mixture to it.For presentation, use a tall, clear bowl (like a trifle bowl) and layer 1/3 jello mixture, then 1/3 of the cream cheese mixture, then 1/3 of the nuts. Repeat twice more until it is all used (ending with nuts on top). Chill at least 6 hours, then serve.
