1 small onion
2 bay leaves
2 garlic cloves
1 teaspoon sea salt
3 large red peppers, roasted peeled and seeded
1/3 cup salt packed capers, rinsed


How Do I Make Michele's Chickpea Salad?

Here is how you make Michele's Chickpea Salad:

Drain and rinse the chickpeas, place inmedium sauce pan, and cover with fresh cold water. Put the onion, bay leaf and garlic in a cheesecloth to make a sachet, add it to the water and bring it to a boil. Reduce the heat and simmer covered for 15 minutes. Add the salt and continue to cook for another 20 minutes or until the chickpeas are done. Drain the beans and discard the sachet. Transfer the beans to a bowl and toss with 1/4 cup of the olive oil. Cut the peppers into a large dice. Add the peppers and the capers to the beans along with the remaining olive oil and lemon juice and toss.
