I mixed this up from a leftover couscous dish and leftover vegetables. I liked it so much I now make it on purpose. The seasonings might seem incongruous, but they work together well. Note- I prepare the whole bag of couscous with the onion and spices, then we eat half as a side dish and I make the salad with the rest. Nutrition and recipe counts are for half the bag. I left the whole onion and whole amount of spices and olive oil so you can make the whole bag. Thus your actual calories for this dish will a little lower than documented.

1 Bag Osem Israeli Couscous (or other pearl couscous)
1 Medium Onion
1 Vegetable Bouillon Cube in
2 Cups of Water
Black Pepper, Curry Powder, Garlic Powder,Cumin and Black Pepper to taste (or 1 tsp each)
1/4 Cup Raisins

To Make 1/2 Couscous dish into pasta salad:

1/2 Prepared Couscous Dish
About 12 grape tomatoes halved
1/3 Cucumber chopped fine
1/2 Cup cooked carrots chopped fine
1/2 Cup cooked broccoli chopped into small florets
4 Tbs of Kraft Greek Vinaigrette Dressing

Here is how you make Couscous and Veggie "Pasta" Salad:

Makes about 4 half cup servings of salad and 3 servings of curry couscousMake Osem Couscous according to the package:Brown the onion in 1 tbs olive oil, add bag of couscous and toast.add spices to taste, add 2 cups of boiling water and a bouillon cube. Bring to a boil then cover and simmer about 10 minutes. Fluff and add in raisins. Reserve or eat about half of this dish.Take the other half of the couscous and mix in cooked broccoli and carrots, fresh halved grape tomatoes and diced cucumber.The amounts of veg I added are just a guideline.
