Cut potatoes into small pieces (4's). Boiled potatoes until fully cooked, remove from heat, drain and rinse. Let cool 3 hours. Hard boil 2 eggs, peel and chop, (I remove the yolks to cut back on cholesterol) Mix chilled potatoes with remaining ingredients, and whatever else you like in potato salad. Chill, and serve!
