Cook quinoa in water with bouillon cub and minced garlic clove.Julienne or dice carrot and brussel sprouts (I use a mandoline to julienne). While quinoa is cooking, saute carrot and brussel sprouts in half of the olive oil. Once quinoa is cooked, combine brussel sprouts, carrot and quinoa, add apple cider vinegar and rest of olive oil, and salt and pepper to taste.
