-1 garlic clove, minced
- salt
- 2 tablespoons Greek yogurt or plain yogurt
- 2 teaspoons curry powder
- 1 1/2 tablespoons fresh lemon juice
- 4 tablespoons light olive or sunflower seed oil
- 2 tablespoons finely chopped cilantro

Quinoa Salad:Bring 3 cups of water to boil and add 1/2 tsp of salt and the quinoa, lower the heat, cover and simmer until the quinoa is tender (12-15 minutes). Drain. Toss all of the ingredients together with the drained quinoa except for the almonds, add those just before serving.Curry Dressing:Place all ingredients, except the cilantro into a jar with a tight fitting lid. Shake vigorously until thoroughly combined. Let stand 10 minutes. Stir in the cilantro and taste. Adjust the seasoning as needed.
