Nice summery side dish; good to bring to barbeques. When making in advance, I like to wait to add the dressing until right before it's served. I got this recipe from a good friend Katie, who teaches cooking classes at the local Whole Foods. The theme of the class was "cooking for a family of 4 for less money than it would cost to eat at McDonald's."

1.5 c. brown rice
3 c. water
1 can (15oz) pineapple - sliced into chunks, reserve juice
1 mango, sliced into chunks
1 red bell pepper, sliced into chunks
1 tbsp sesame oil
1 tbsp soy sauce
1 tsp ground ginger

Here is how you make Brown Rice, fruit and Veggie Salad (From Cooking with Katie):

1.) Add rice and water to a sauce pan, season with salt if desired. Bring to a rapid boil and then allow to simmer for 20 minutes, or until rice is cooked and water has steamed away. Remove from heat and allow to cool for a few moments.2.) While rice is simmering, slice mango, pineapple and red pepper into similar sized chunks. Place in a large bowl.3.) In a smaller bowl, combine reserved pineapple sauce, soy sauce, sesame oil, ginger and salt & pepper. Whisk together.4.) When rice has cooled a bit, add to fruit in the big bowl. Add the dressing from step 3 and toss together. Serve warm or chilled.Makes about 8 1c. servings.
