Threw a bunch of things together for lunch, and it tasted so darn good it seemed worth sharing. The tuna provides protein, a little bit of brown rice adds some whole grain (but not too much), sunflower seeds and freeze-dried blueberries add crunch and sweetness. The plain yogurt helps everything stick together, and adds a little bit of creamy flavor. No salad dressing required! I added brown rice because I wanted to add a little bit of flavor without using dressing, but if you want to make it very low carb, you can leave it out and add more sunflower seeds or other nuts instead.If you like things on the spicy side rather than the sweet side, ditch the blueberries and add some spice instead.
