Remove from heat and cool. Carefully puree cauliflower and all the liquid in a blender until very smooth; set aside.Heat oil and butter in a large skillet, add onion and cook until nicely caramelized. Just before reaching caramelization, add garlic and to brown along with onion. Add the cauliflower puree, evap milk, and lemon zest and bring to simmer (If using dry parsley add at this time as well). Cook until slightly thickened, about 5 min and season with salt and pepper.Toss with cooked pasta and Parmeasan cheese.Optional: Omit wine and use only broth or omit broth and use only wine.
