Here is how you make Single Serving Low-Fat Hollandaise Sauce:

Put margarine in bottom of large microwave-safe mug to small bowl. Soften it about 15 seconds. Remove from microwave and stir in egg yolk, beating/stirring with spoon until slightly fluffy. Add lemon juice and white pepper. Stir well. Put in microwave for 30 seconds. A few seconds before the time is up, pause the microwave and remove the mug. Stir the sauce vigorously and check how much of the egg yolk is cooked. Return for 5 seconds, remove and stir, and check. You want it to be cooked but still be able to pour.
