Green Mexican Salsa Verde (1 small can)

Here is how you make Dr. Ludwig's Ranchero Sauce:

Chop the onion, garlic, and all the peppers in a food processor.Heat 2 tbsp olive oil in a heavy dutch oven with a lid. Add the onion/pepper mixture and saute on medium heat for about 10 minutes. Add cumin, oregano, salt and pepper to taste. Add canned chiles and diced tomatoes. Mix well and simmer for 10 more minutes. Taste, and add chile flakes and cayenne as desired.Remember you can always add more, but you can't take it out!Serving Size: 12 1/2 cup servings
