2 tbsp Olive Oil
1 Medium Onion (chopped small)
3 Cloves Garlic (grated)
8 oz. Baby Bella Mushrooms (pre-sliced)
1 Can Del Monte Diced Tomatoes, No Salt Added
0.5 Cup Swanson Chicken Stock, 33% Less Sodium
Dried Parsley
Dried Rosemary
Salt (to taste)
Black Pepper (to taste)


How Do I Make Chunky Tomato and Mushroom Sauce?

Here is how you make Chunky Tomato and Mushroom Sauce:

Heat Olive Oil in a medium-large skillet on Medium to Medium-High heat. Sautee onions until they start to soften. Add Garlic and Mushrooms. Sautee until onions and mushrooms start to brown and are heated through. Add the Canned Tomatoes and Chicken Stock. Season to taste with salt, pepper, dried parsley and dried rosemary. (You can also use fresh herbs, if you have those on hand.) Turn the heat down to Low to Medium, cover and simmer for about 20 minutes, stirring occasionally. Serve over Chicken, Pasta, Eggplant, or whatever else you like!This makes about 4 servings.(The nutrition info is based on 1 tsp each of Salt, Pepper, Parsley and Rosemary, but these can all be adjusted to taste. I just had to put in a specific amount for the tracker. The amount of Chicken Stock is also an estimate. You can add more or less depending on how much juice you want the sauce to have.
