Delicious sauce for anything from chicken to salmon to rice or just as a dip for brad or veggies- It disappears faster than you can serve it.Use 1 large seedless cucumber with the peel if you can or 1 1/2 regular cucumbers peeled if you don't have seedless. Salt and pepper are always to taste, and the olive oil is optional but gives the sauce a bit of richness that is pretty good. This sauce doesn't usually call for onion, but, I like it.

How Do I Make Andrea's greek yogurt sauce.. tzatziki?

Here is how you make Andrea's greek yogurt sauce.. tzatziki:

Line a strainer with a cheese cloth or coffee filters. I use coffee filters. Place strainer in pot or bowl. Empty yogurt into strainer and place in frige for a few hours, allowing water to drain away from yogurt. It is important to do this or you will have watery sauce- yuck. In the meantime, wash your cucumber, and cut off the ends- split in half lengthwise, and scoop out the watery middle where the seeds are (even seedless cucumbers have this) Grate your cucumber with a metal grater or in the food processor. Place on cheese cloth, or paper towels, and squeeze out as much water as you can. Again, very important- watery sauce- yuck.Place cucumber in bowl, add strained yogurt, and all other ingredients- mix well, cover, place in frige for 2 hours, and serve with just about anything.
