How Do I Make Saute-Steamed Bok Choy?

Here is how you make Saute-Steamed Bok Choy:

Cut 1 inch off the bottom of the bok choy and separate the stems and leaves. Cut the stems into small pieces and cut the leaves crosswise into medium strips. In a large pan saute the garlic and ginger in the olive oil for a minute over medium heat. Add the bok choy stems (they take longer) and saute 3-5 minutes more. Add the leaves and water and cook another 6 minutes, stirring occasionally. Season to taste with soy sauce and pepper.
