Here is how you make Light Scalloped Poatoes:

1. Preheat oven to 425 degrees. Brush a large ovenproof skillet with 1/2 tablespoon of earth balance. Heat over medium-high heat. Add half of the potatoes, season with salt and pepper and a little nutmeg. Arrange the rest of the poatoes on top, season with more salt, pepper and nutmeg. Tuck the bay leaves into the potatoes. Pour the broth and milk over the top and let simmer for 3 minutes.2. Dot the rest of the earth balance over the top of the poatoes and sprinkle with the shredded gruyere. Bake until golden, about 25 minutes, placing under the broiler for a crisper crust, if desired.
