3 cloves garlic, minced
2 T. olive oil
2 carrots, diced
1 celery stalk
2 cups potato, diced
4 cups broth (chicken or vegetable)
1/2 c. peanut butter
1 can stewed tomatoes cut into chunks (2 cups)
cayenne and black pepper

Here is how you make Peanut Butter Soup:

1. Put onion, garlic and oil in a soup pot and cook until onions are translucent.2. Add stock, celery, carrot, potato, leek and 1/3 of the tomatoes. Bring to a boil, then put heat on low and simmer covered for 15 minutes.3. In a food processor, puree the ingredients, adding in the peanuts at this time.
