2 Tbsp olive oil
1/2 cup onion, diced
1 cup carrot, diced
1 cup celery, diced
3 cloves garlic, minced

Here is how you make Slow Cooker Mushroom Soup:

Heat 1Tbsp olive oil in large skillet over med heat. Saute onion, celery, carrot and garlic until softened (about 5 min). Add half of the mushrooms and remaining seasonings and saute until mushrooms are cooked (about 5-10 min). Scrape into slow cooker, add broth and stir. Cook on Low for 6-8 hours. Once cooked empty into food processor and process until smooth. Meanwhile saute the remaining 8 oz of chopped mushrooms with the other Tbsp of olive oil. Combine sauteed mushrooms with soup puree in a large saucepan along with 1/2 cup skim milk and heat through.Serving Size:?makes 6 1-cup servings
