Makes 4 servings.Cook 5 potatoes, peeled and cubed, and 1/2 cup chopped onion until tender. Drain well. Set aside 1 cup cooked vegetables.In a food processor, combine the remaining cooked vegetables and the broth. Cover and process about 1 minute or until smooth.
