Here is how you make Soup Base, stew base or flavoring:

Put oil in skillet and turn heat to medium/high. (You may need to adjust heat as you cook.) Add onions (or what ever) and start to cook in pan until it starts getting browned. Stirring lightly so that it is not made into mush. As it starts to stick and get browner add some water and continue to stir and let the food get even browner. The trick is to add the water before it actually burns, but to let it get browned - this is where the flavor is. Continue doing this until the food is browned to taste and you have enough of the browning for flavor and add enough water to get your desired amount of base. A little water with the rest of your ingredients makes like a stew and more water makes a soup. Very little water and more veges makes it like a grilled taste and texture and has the look of grilling. If you desire this grilling affect you may need to add a little more olive oil and less water, but remember to add the calories for the oil.Practice makes perfect and once you get this technique you will want to use it for everything you cook. It does not require a pan full of oil and it saves on calories and fat with tons of flavor.
