Here is how you make Sweetpotato Spinach Curry:

Makes 4 servings, about 1/2 cup each.Prep all the ingredients first, because it goes together very quickly once you start to saute.Peel & chop the sweetpotato. Microwave it in a covered microwave-safe container for 4 minutes. Keep covered & set aside.If the baby spinach is in a microwave bag, follow instructions on the bag. Otherwise, put in a covered microwave-safe container and microwave about 2 minutes.Chop the tomato and set aside.Chop the onion. Saute in olive oil until the onion begins to brown. Add garlic, chopped tomato, curry powder, and maple syrup. Cook for 1-2 minutes, stirring. Add spinach & sweet potatoes, stir until heated through.
