1 28 oz. pkg frozen spinach
2 pkg. Miracle Noodles, any kind
2T powdered bouillion, any flavor
4 T warm water
2T dehydrated, minced onion
6 egg whites, divided
2 T Parkay or I Can't Believe It's Not Butter Spray (zero calorie)
1 T dry mustard
1 t garlic salt
1 cup grated 2% cheese
1T Parmesian cheese


How Do I Make "It's A Miracle" Spinach Souffle?

Here is how you make "It's A Miracle" Spinach Souffle:

Cook the spinach according to directions. Put cooked spinach in a colander and squeeze out as much moisture as possible. Put a quart bowl of water in the microwave and bring to a boil. While the water is heating, rinse the packages of shiritaki noodles or rice shaped noodles, in a colander, with plenty of water. When the quart of water is boiling, carefully stir in the noodles, and continue to stir for one minute (this is to rinse the noodles and free them from the odor that is in the packaging liquid). After one minute, pour the noodles/rice back into the colander to drain thoroughly (if possible, pat dry). Pour the noodles back into the quart bowl (this should be the bowl you will use to cook the souffle), and add the flavored bouillion, stirring until mixed in thoroughly. If not using rice shaped shiritaki, this is the time to cut the noodles into small pieces (I use a kitchen scissors). Pour water into a small bowl and add dehydrated minced onion, to soften. Pour half the egg whites in with the noodles and mix well. Add konjac glucomannan powder and immediately mix well, as powder will begin to set right away. In a separate bowl, combine spinach, spray butter, garlic salt and mustard and mix well. In yet another bowl, mix the remaining egg whites until frothy. Gently fold into the spinach mixture. Gently pour egg/spinach mixture on top of the noodles. Top with cheeses. Cook on high in microwave for five minutes. Turn and cook for five more minutes. Let sit for 2 minutes before cutting. Makes 6 large servings, 103 calories each.[Can be adapted to cook in the oven, for about 20 minutes at about 350 degrees, which will also brown the cheese on top. You could cook it in the microwave and then slip it under the broiler for a few minutes to brown the cheese; can also be adapted in many different ways: add more cheese, add pine nuts, use cream or evaporated milk.
