16 ounces TOTAL of cheddar cheeses (Sharp, Mild and Medium) - freshly shredded

2 cups milk

8 large eggs, whisked to froth

Here is how you make Squash Frittata:

Grate the cheese first. Then slice the squash. Separate out about 1 1/2 handfuls of cheese (maybe a very loosely packed cup of cheese)Put a heavy layer of cheese on the bottom of a glass cake pan (9x13). Then layer on a double or triple layer of squash, a moderate layer of cheese. Repeat until the top layer (which is squash). Mix the eggs and milk. Slowly pour over the squash and cheese. The milk/egg mix should fill in the gaps of the layers and settle in. Top with the remaining cheese.Put into cold oven. Turn heat to 400. Bake for 1 hour. Done when top is browned and the casserole is set in the center (not jiggly).
