Preheat grill to medium. Place four sections of aluminum foil on flat surface. Lightly coat each with cooking spray, if desired. (Cooking spray not calculated in nutrition totals). Place approximately 1 c of squash cubes in center of each piece of foil. Top each with a pat of butter and 1/2 Tbsp of maple syrup. Sprinkle with salt and pepper to taste. Carefully fold each of two opposite ends to meet in center, roll over to form a seal and flatten. Fold each remaining end over as if wrapping a gift to seal tightly.
