I was trying to come up with a new recipe for Summer Squash & got this idea from one of the Zucchine dish recipes. I've tweaked the recipe to fit in the ingredients I wanted. I was VERY happy with the results & both my husband & I are adding this as an all time favorite!

1/8 c Pecorino Romano cheese

Here is how you make Summer Squash Parmesan:

1. Slice squash 1/4" thick on mandolin slicer2. Spray Pam onto two cookie sheets3. Evenly spread squash slices on each tray4. Spray top of squash slices5. Sprinkle Creole seasoning VERY lightly6. Broil on high, 2nd rack down until starting to brown7. Flip squash & broil on other side8. Sprinkle cheese on top of slices & broil till cheese is bubbly.
