Here is how you make Pickled Squash:

Soak squash in 3 quarts water salted with 2/3 cup salt for 1 hour. Pour off brine. Make syrup. Bring to a boil. Drop squash, onions, green peppers and pimento in to syrup and bring to a boil again.
