Preheat oven to 375?F. Spray an 8x12" baking dish with cooking spray.Using a fork, poke holes in whole spaghetti squash in several spots and place in a microwave proof dish. Microwave for 10 minutes. Cut open and let it cool enough to handle, then using a fork scrape out the flesh of the squash.In a large bowl, whisk all ingredients (except squash, apples and cherries) until well combined. Add cooked squash and cherries and mix again. Pour into greased baking pan and top with apples.Bake for 60 minutes or until golden and set.
