Here is how you make Spaghetti Squash w/vegetables:

Cut a few slits in the squash, microwave for about 5 minutes to soften a little. Using sharp knife split squash in half lengthwise and remove seeds. Microwave skin-side down in glass baking dish, High power for 12 minutes, rotating the pieces halfway through. Test with small knife to see if it is tender; if not, microwave it for a few more minutes. In non-stick pan, sauté garlic and onions until they start to soften. Add the rest of the vegetables and sauté for about 5 minutes at medium heat till they start to soften. Don’t let the onion get brown. Now, add the tomatoes and stir. Simmer at medium heat till the excess liquid is evaporated, about 30-45 minutes. Use oven mitts – baking dish will be hot, remove squash from microwave. Let the squash cool enough to handle, then take a fork down the length of the squash and scrape the squash into pasta strands.
